It’s a wonderful dish to have anytime, any season, and certainly a dish where you can prepare ahead and just leave it to cook (slow cook) until the beef is tender and full of flavor. TIP: I picked up the beef from Walmart, I look at the offer items where they say used by is like in a couple of days. You pay about $3-$4 less and best to buy the beef on the same day you’re going to prepare the dish, this way you don’t have to keep it in the freezer and have to thaw it.
Ingredients (Serves 6 persons):
2 tbsp vegetable oil
Salt and pepper to taste
All-Purpose flour as needed
1 boneless chuck roast (about 3 pounds)
8 oz sliced mushrooms
1 onion, chopped
2 cloves garlic, minced
1 tbsp butter
1 1/2 tbsp flour
1 tbsp tomato paste
2 1/2 cups chicken broth
3 carrots, cut in chunks
2 ribs celery, cut in chunks
3 carrots, cut in chunks
2 ribs celery, cut in chunks
a few springs of rosemary and thyme
Slow Cooker/Crock Pot: Layer the celery and carrots at the bottom of the cooker.
- Pad dry the beef (make sure the beef is at room temperature). Salt & Pepper generously both sides of the beef.
- Lightly coat the beef with all-purpose flour and pad it in (give it some TLC).
- In a large skillet, heat the vegetable oil on medium high to sear the beef on both sides until brown.
- Remove the beef to a plate.
- In the same skillet on medium heat, put in the mushrooms and butter, let it saute for 3 minutes.
- Put in the onions for another minute.
- Add in the garlic and let it cook for about 2 minutes
- Now add the all-purpose flour, give it a good stir and mix it around.
- Add the tomato paste, again stir it and mix it around.
- Add the chicken broth and let it come to a simmer
- Put the beef into the Slow Cooker
- Add the rosemary & thyme. Pour the mushroom & onion mixture into the Slow Cooker
*Cook in slow cooker on high for 5-6 hours, or on low setting for 8-10 hours
Before serving, make sure you skim off the layer of oil.



Thanks for the recipe. Really nice and quick to prepare. No fuss, I went home during lunch break and within 30mins, got every item into the Slow Cooker. Went back to work and by the time I got home, it was ready and the kids just love it with mashed potatoes. I prefer it with rice.
